Course Title

Course Objectives: Muffins Baking + Scones Baking
- Comply with food hygiene regulations when baking muffins and scones.
- Assemble utensils, tools and appliances for baking muffins and scones.
- Select and prepare ingredients to bake muffins and scones.
- Follow the instructions stated in recipes closely to bake muffins and scones.
- Test the doneness, de-pan, assemble, and decorate muffins and scones.
- Reinstate workstation in accordance with food hygiene regulations.
- Develop the ability to self-reflect and improve on own competencies through constructive feedbacks and peer learning on food & beverage trends.

Course Content: Muffins Baking + Scones Baking
- Knowledge on the type of baking ingredients suitable for baking muffins and scones
- Functionality of ingredients used for baking muffins and baking scones.
- Method and techniques used to produce muffins, such as Blueberry Streusel and Cheesy Polenta, and scones, such as Cheddar & Scallion, Lemon-Scented, and Cranberry, Double Chocolate scones
- Discuss and calculate the recipes using Baker’s Percentage and proportion
- Complete the baking to the required standard taking into consideration of the colour of the crumb grain and uniform cell structure
- Evaluate baked muffins and scones by comparing and assessing the product outcome as part of the learning activities
Learners get to bring home: Muffins – Blueberry Streusel and Cheesy Polenta, Scones – Cheddar & Scallion, Lemon-Scented, and Cranberry, Double Chocolate.
Course Training Duration
Total 26.5 in-class training hours.
Day 1-2 : (9am – 7pm), Day 3 : (9am – 6:30pm)
External Venue : Bukit Merah and Havelock II
Mode of Training
The training is conducted in classroom. Each learner will have their own fully-equipped station, where they can try their hand at baking several recipes.
There will also be a live demonstration, where in-house chefs will be teaching and demonstrating the entire process live.
Certification
Participants who fulfil all requirements will receive a Statement of Attainment (SOA) issued by the SkillsFuture Singapore (SSG).
