Make Chocolate and Pralines class – 31 hours of classroom learning and practical to learn how to make Chocolate Decorations (Chocolate Stencils Piping Deco, Acetate Sheets), Chocolate Bar Tablets with Assorted Nuts & Fruits, Chocolate Nut Clusters, Ganache for Fillings, Molded Chocolate Pralines, Chocolate Truffles, and Chocolate Bon Bons.

Course Objectives: Chocolate Making and Praline Making Class

  • Prepare tools, equipment, and ingredients for chocolate decorations and pralines
  • Temper chocolate products with appropriate tabling, seeding, and microwave methods
  • Prepare a range of ganache fillings
  • Mold, set, and store chocolates
  • Identify qualities and faults in chocolates
  • Comply with Workplace, Safety, and Health (WSH), food hygiene, and handling requirements

  1. History of Chocolate
  2. From Bean to Chocolate
  3. Conching and Refining
  4. Creating Cocoa Butter Crystals
  5. Tabling Method: Double Boiler/Water Bath/Dry Tempering
  6. Fillings for Chocolate Pralines
  7. Common Faults in Chocolate
  8. Practical:
    • Chocolate Decorations,
    • Chocolate Bars (Tablets) & Nut Clusters
    • Ganache Fillings, Moulded Pralines
    • Chocolate Truffles, Moulded Figures
  9. Assessment

Learners get to learn: Chocolate Decorations (Chocolate Stencils Piping Deco, Acetate Sheets), Chocolate Bar Tablets with Assorted Nuts & Fruits, Chocolate Nut Clusters, Ganache for Fillings, Molded Chocolate Pralines, Chocolate Truffles, and Chocolate Bon Bons.

Course Training Duration

Total 31 in-class training hours.

Time: (9am – 6pm)

External Venue: Bukit Merah

Mode of Training

The training is conducted in classroom. Each learner will have their own fully-equipped station, where they can try their hand at baking several recipes.

There will also be a live demonstration, where in-house chefs will be teaching and demonstrating the entire process live.

Certification

Participants who fulfil all requirements will receive a Statement of Attainment (SOA) issued by the SkillsFuture Singapore (SSG).

My sister and I had many questions about the different courses. The staff present including the boss Mr Wee were very patient and friendly to help us. The centre at Toa Payoh was also easy to get to and centre facilities were kept clean and tidy. We have a very good experience.
