Course Outline
This course will equip learners with the knowledge and skills to prepare a variety of artisan breads commonly enjoyed worldwide. Learners will acquire this expertise through a combination of hands-on practical training and classroom learning:
- French Baguette – Classic crusty French bread
- Focaccia – Italian flatbread infused with olive oil and herbs
- Ciabatta – Rustic Italian bread with airy texture
- Starter Dough for Sourdough – Basics of sourdough fermentation
- Rustic Country Loaf – Hearty bread with chewy crumb
- Sourdough Bread – Naturally fermented bread with tangy flavor
- Pullman Loaf (Poolish Method) – Square-shaped bread ideal for sandwiches
- Bagel – Chewy, boiled bread with glossy crust
Mode of Assessment
Not Applicable. The training is conducted in the classroom, just like in baking school. Each learner will have their own fully equipped station, where they can try their hand at making several recipes.
There will also be a live demonstration, where in-house chefs will be teaching and demonstrating the entire process live.
Certification
Participants who fulfil all requirements will receive a Statement of Attainment (SOA) issued by SkillsFuture Singapore (SSG). This certification confirms your completion of a comprehensive baking course in Singapore.

Subsidies

Companies can benefit from Absentee Payroll (AP) funding at $4.50 per hour, capped at $100,000 per enterprise per calendar year. AP funding will be computed based on the actual number of training hours attended by the trainee.
