Whether you’re a home cook or a curious beginner, our hands-on Peranakan cooking class will teach you authentic Nonya techniques so you can confidently recreate these traditional dishes and celebrate Singapore’s rich culinary heritage.

By the end of this Peranakan cooking class, participants will be able to:

  • Identify the cultural significance of Peranakan cuisine and recognize key traditional ingredients
  • Apply foundational techniques to prepare classic Nonya dishes such as Achar, Kueh Pie Tie, Popiah, Dry Mee Siam, Kapitan Chicken Curry, and Sugee Cake
  • Comply with essential food hygiene standards and maintain a safe cooking environment
  • Assemble appropriate tools and appliances, select quality ingredients, and portion them correctly
  • Follow instructions accurately, control time and temperature, and troubleshoot to achieve desired texture, consistency, and visual appeal
  • Evaluate dishes for authenticity and develop habits for consistent, high-quality results
  • Reinstate and clean the workstation according to hygiene regulations

This course will equip learners with the knowledge and skills to prepare an assortment of classic Nonya dishes that reflect Singapore’s rich Peranakan heritage. Learners will acquire this expertise through a combination of hands-on practical training and classroom learning:

  1. Peranakan Achar – Tangy pickled vegetables with aromatic spices
  2. Kueh Pie Tee – Crispy pastry shells filled with savory vegetables
  3. Nyonya Popiah – Fresh spring rolls with flavorful fillings
  4. Dry Mee Siam – Spicy stir-fried vermicelli noodles
  5. Kapitan Chicken Curry – Rich, fragrant curry with traditional spices
  6. Sugee Cake – Classic semolina cake with buttery texture

Learners will also gain essential skills in ingredient selection, kitchen setup, food hygiene, and workstation management to ensure authentic and high-quality results.

  • Assessment for this course will be conducted through practical demonstrations and written evaluations, ensuring you’ve grasped both the theoretical knowledge and hands-on skills.
  • Attendance requirement: min 75% attendance
  • Course completion requirements: Fulfil at least 75% minimum attendance and pass assessments – competent (Refer to mode of assessment for details)
  • Participants who fulfill all requirements will receive a Statement of Attainment (SOA) issued by SkillsFuture Singapore (SSG).

The Statement of Attainment (SOA) issued by SkillsFuture Singapore is a lifetime certificate with no expiry date and does not require renewal. Food handlers are required to obtain a food hygiene certificate in Singapore to work in commercial settings. Food hygiene certificates in Singapore are valid for 5 years upon completion and can be renewed upon attending a food hygiene refresher course.

Candidate must maintain proper dress code and adhere to all of the following pre-requisites when attending the class:

  • Learners should be at least 18 years old.
  • Learners should have at least primary school or equivalent education.
  • Learners must be able to listen, speak, read, and write English at a level equivalent to Workplace Literacy – Level 4 and above.
  • Learners who do not meet the above requirements will be required to go through a short interview to verify their language and cognitive ability.

It is advisable to wear long pants and covered shoes as you will be standing for a long period.

Eligible Singapore Citizens can use their SkillsFuture Credits to offset course fee payable after funding. NTUC members can enjoy up to 50% funding (capped at $250 per year) under the Union Training Assistance Programme (UTAP) as this course is eligible for UTAP.

Companies can benefit from Absentee Payroll (AP) funding at $4.50 per hour, capped at $100,000 per enterprise per calendar year. AP funding will be computed based on the actual number of training hours attended by the trainee.

I had a very disappointing experience at the Tampines outlet.

The front counter staff (seated on the left side, near the classroom entrance) provided poor customer service. I was having difficulty scanning the QR code and politely asked for assistance several times. Instead of offering help, she appeared unwilling to assist and displayed an unfriendly facial expression, making me feel very unwelcome.

For my second attendance, I noticed they are in lunch break, so I get her colleague called her out to assist me, she still looked unhappy and reluctant to help.

Customer service should be patient and professional, especially when customers are experiencing technical issues. I hope the management will look into this and improve the service experience at this outlet.
