Course Outline
Chinese Dim Sum Making Course
This course will equip learners with the knowledge and skills to prepare an assortment of basic Dim Sum dishes commonly seen in Chinese restaurants. Learners will acquire this expertise in preparing moist-heat Dim Sum dishes through a combination of hands-on practical training and classroom learning:
- Har Gow (Shrimp Dumplings) 虾饺 – Shrimp wrapped in translucent tapioca skin
- Hong Kong Style Egg Tarts 蛋橽 – Baked pastry crust with egg custard filling
- Salted Egg Custard Bun 奶皇包 – Steam bun with salted egg custard filling
- Siew Mai (Chicken and Shrimp Dumpling) 烧卖 – Steamed dumpling with chicken & shrimp filling
- Chee Cheong Fun (Rice noodle rolls) 豬腸粉 – Steamed rice rolls
Learners will also get to bring home the above items.

- WA: Written Assessment – 30 minutes
- PA: Practical Assessment – 1 hour

- Course completion requirements: Fulfil at least 75% minimum attendance and pass assessments – competent (Refer to mode of assessment for details)
- Participants who fulfill all requirements will receive a Statement of Attainment (SOA) issued by SkillsFuture Singapore (SSG). The SOA will be reflected as FSS-FBS-1006-1.1 Chinese Moist-Heat Dish Preparation and Cooking-1.
Validity
The Statement of Attainment (SOA) issued by SkillsFuture Singapore is a lifetime certificate with no expiry date and does not require renewal. Food handlers are required to obtain a food hygiene certificate in Singapore to work in commercial settings. Food hygiene certificates in Singapore are valid for 5 years upon completion and can be renewed upon attending a food hygiene refresher course.
Pre-requisites
- Learners should be at least 18 years old.
- Learners should have at least primary school or equivalent education.
- Learners must be able to listen, speak, read, and write English at a level equivalent to Workplace Literacy – Level 4 and above.
- Learners who do not meet the above requirements will be required to go through a short interview to verify their language and cognitive ability.

It is advisable to wear long pants and covered shoes as you will be standing for a long period.

Subsidies
Eligible Singapore Citizens can use their SkillsFuture Credits to offset course fee payable after funding. NTUC members can enjoy up to 50% funding (capped at $250 per year) under the Union Training Assistance Programme (UTAP) as this course is eligible for UTAP.
Companies can benefit from Absentee Payroll (AP) funding at $4.50 per hour, capped at $100,000 per enterprise per calendar year. AP funding will be computed based on the actual number of training hours attended by the trainee.

What are the course funding available?

– Singapore citizens or Singapore permanent residents
– From October 1, 2023, attendance for all courses sponsored by SkillsFuture Singapore (SSG) must be conducted through the Singpass app. This applies to both in-person and concurrent online learning courses.
– Students must achieve at least 75% attendance.
– Students must pass all required tests/assessments and achieve 100% skill level.
– We reserve the right to reclaim the sponsorship amount if a student fails to meet the eligibility criteria.
