Course Objectives: Bread Baking Class – Artisan Bread
- Comply with food hygiene regulations when baking artisan and decorative breads.
- Assemble utensils, tools and appliances for baking artisan and decorative breads.
- Select and prepare ingredients to bake artisan and decorative breads.
- Follow the instructions stated in recipes closely to bake artisan and decorative breads.
- Test the doneness, de-pan, assemble, and decorate artisan and decorative breads
- Reinstate workstation in accordance with food hygiene regulations.
- Develop the ability to self-reflect and improve on own competencies through constructive feedbacks and peer learning on food & beverage trends.

Course Content: Bread Baking Class – Artisan Bread
- Understand the entire process in baking artisan and decorative breads.
- Have the knowledge on the type of industrial tools and equipment use.
- Have the knowledge on the types of ingredients and its properties for use.
- Have the knowledge of the procedures in mixing and fermenting of dough for artisan and decorative breads.
- Have the knowledge of formulation of bread such as the water temperature and type of flours used.
- Have the knowledge of storage of baked breads.
- Be able to assemble, prepare, shape and proof dough for artisan and decorative breads.
- Be able to prepare and adjust bread percentage for lean and enrich dough.
- Be able to bake the different types of artisan and decorative bread.
- Be able to identify and prevent common faults when baking artisan and decorative breads.
Learners get to bring home: Classic Sourdough, White Bread using Poolish, Zopf Bread, Focaccia, Clabatta, Crusty Bread and Pizza
Course Training Duration
Total 32 in-class training hours.
Time: (9am – 6pm)
External Venue: Bukit Merah and Havelock II
Mode of Training
The training is conducted in classroom. Each learner will have their own fully-equipped station, where they can try their hand at baking several recipes.
There will also be a live demonstration, where in-house chefs will be teaching and demonstrating the entire process live.
Certification
Participants who fulfil all requirements will receive a Statement of Attainment (SOA) issued by the SkillsFuture Singapore (SSG).
